From outside, it looks like just another welcoming neighbourhood bar in Mexico City’s bohemian Colonia Condesa. And it is, as the warm service, great music and the throng of regulars make clear. But sit down at one of the outdoor tables or walk into the bar proper, and, menu in hand, you’ll realise Baltra is more than just neighbourly. Led by José Luis Leon, of Limantour fame, Baltra owes its name to one of the islands visited by Darwin while in the Galapagos and its cocktail programme is all about evolution. Almanaque Silvestre, the latest menu, focuses on flowers “and the evolution of beauty through time”.
Mostly based on classic structures, the cocktails go big on flavours; they’re both comforting and surprising. Baltra has also made a name for itself through the Martini Tuesday, a weekly gathering of industry figures and enthusiasts of perfect Martinis. A family reunion one can get behind.
